Gourmet Grilled Mushroom Kabobs Recipe
Ingredients:
For the Mushrooms:
- 1 lb mixed fresh mushrooms (King Trumpet, Shiitake, Blue Oyster or Lion's Mane) OR 2 oz mixed dried mushrooms
- 1 large red bell pepper, cut into 1-inch pieces
- 1 large yellow bell pepper, cut into 1-inch pieces
- 1 medium red onion, cut into wedges
- 1 zucchini, sliced into thick rounds
- 8-10 wooden or metal skewers
For the Marinade:
- 1/4 cup olive oil
- 3 tbsp balsamic vinegar
- 2 tbsp soy sauce
- 3 cloves garlic, minced
- 2 tbsp fresh herbs (rosemary, thyme, or oregano)
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 1 tsp salt
- 1 tbsp honey or maple syrup
Instructions:
- Prep mushrooms: If using dried mushrooms, soak in warm water for 30 minutes, then drain and pat dry. Cut larger mushrooms (like King Trumpet) into 1-inch pieces. Leave smaller mushrooms whole.
- Make marinade: In a large bowl, whisk together olive oil, balsamic vinegar, soy sauce, minced garlic, fresh herbs, smoked paprika, black pepper, salt, and honey.
- Marinate vegetables: Add mushrooms, bell peppers, onion, and zucchini to the marinade. Toss to coat evenly. Let marinate for at least 30 minutes, or up to 2 hours for deeper flavor.
- Prepare skewers: If using wooden skewers, soak in water for 30 minutes to prevent burning. Thread marinated vegetables onto skewers, alternating colors and types for visual appeal.
- Preheat grill: Heat grill to medium-high heat (about 400°F). Clean and oil grates to prevent sticking.
- Grill kabobs: Place skewers on grill and cook 10-12 minutes, turning every 3-4 minutes. Brush with remaining marinade while cooking.
- Check doneness: Mushrooms should be tender and lightly charred, vegetables should be crisp-tender.
- Rest and serve: Let kabobs rest 2-3 minutes before serving. Garnish with fresh herbs if desired.
Prep time: 20 minutes (plus 30 min marinating) | Cook time: 12 minutes | Serves: 4-6 people
