Creamy Chestnut Mushroom Soup
Velvety, earthy, and deeply satisfying – this gourmet mushroom soup is comfort in a bowl.
Ingredients
- 1 lb Chestnut Mushrooms, cleaned and sliced (or 2 oz. dried)
- 2 tbsp butter
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 3 cups vegetable or chicken broth
- 1 cup heavy cream (or coconut cream for dairy-free)
- 2 sprigs fresh thyme
- 1 bay leaf
- Salt and black pepper to taste
- Fresh parsley and crusty bread for serving
Instructions
- Heat butter and olive oil in a large pot over medium heat. Add onion and cook 5 minutes until softened.
- Add Chestnut Mushrooms and cook 8-10 minutes, stirring occasionally, until golden and their moisture has released.
- Stir in garlic and cook 1 minute until fragrant.
- Pour in broth, add thyme and bay leaf. Bring to a boil, then reduce heat and simmer 15 minutes.
- Remove thyme sprigs and bay leaf. Use an immersion blender to blend until smooth (or leave chunky for texture).
- Stir in cream, season with salt and pepper, and heat through. Don't boil after adding cream.
- Serve hot, garnished with fresh parsley, microgreens and a drizzle of cream.
