Creamy Chestnut Mushroom Soup

Velvety, earthy, and deeply satisfying – this gourmet mushroom soup is comfort in a bowl.

Ingredients

  • 1 lb Chestnut Mushrooms, cleaned and sliced (or 2 oz. dried) 
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 cups vegetable or chicken broth
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • Fresh parsley and crusty bread for serving

Instructions

  1. Heat butter and olive oil in a large pot over medium heat. Add onion and cook 5 minutes until softened.
  2. Add Chestnut Mushrooms and cook 8-10 minutes, stirring occasionally, until golden and their moisture has released.
  3. Stir in garlic and cook 1 minute until fragrant.
  4. Pour in broth, add thyme and bay leaf. Bring to a boil, then reduce heat and simmer 15 minutes.
  5. Remove thyme sprigs and bay leaf. Use an immersion blender to blend until smooth (or leave chunky for texture).
  6. Stir in cream, season with salt and pepper, and heat through. Don't boil after adding cream.
  7. Serve hot, garnished with fresh parsley, microgreens and a drizzle of cream.
