"Quick & Easy Mushroom Stuffing"

Ingredients:
• 2 boxes Stove Top stuffing mix
• 1 lb fresh mushrooms (any variety) OR 2 oz dried mushrooms, diced
• 10 tbsp butter
• 3 cups water
• Salt and pepper to taste

Instructions:
1. Prep mushrooms: If using dried mushrooms, soak in room temperature water for 20 minutes, then drain and pat dry.
2. Sauté mushrooms: In a large skillet, melt 2 tbsp butter over medium heat. Add diced mushrooms and cook for 5 minutes.
3. Finish mushrooms: Add 1 more tbsp butter and cook 5 minutes more until golden and crispy.
4. Make stuffing: Prepare Stove Top stuffing according to package directions using remaining butter.
5. Combine: Gently fold sautéed mushrooms into prepared stuffing.
6. Serve: Transfer to serving dish or for extra crispness, bake in 375°F oven for 10 minutes.

"Gourmet Holiday Mushroom Stuffing"

Ingredients:
• 12 slices artisan bread (French or sourdough), cut into ½-inch cubes
• 1½ lbs mixed fresh mushrooms (shiitake, cremini, oyster) OR 2 oz premium dried mushrooms
• 4 tbsp butter
• 2 tbsp extra virgin olive oil
• 9 shallots OR 3 red onions, diced
• 6 cloves garlic, minced
• 1½ tbsp fresh thyme, minced
• 3 cups warm chicken or vegetable broth
• 1½ cups heavy cream
• 5 large eggs, beaten
• ½ cup fresh parsley, chopped
• ½ cup brandy or white grape juice
• 3 tsp kosher salt
• Fresh ground black pepper to taste

Instructions:
1. Toast bread: Preheat oven to 350°F. Spread bread cubes on baking sheet and toast 5-6 minutes until golden.
2. Prep mushrooms: If using dried, soak 20 minutes, drain, and pat dry. Chop all mushrooms into uniform pieces.
3. Sauté vegetables: In large skillet over medium heat, melt butter with olive oil. Add mushrooms, shallots, garlic, and thyme. Cook 20 minutes, stirring occasionally, until deeply golden.
4. Deglaze: Add brandy and simmer until slightly thickened. Add salt and warm broth, bring to gentle simmer.
5. Combine: In large bowl, whisk eggs with cream and black pepper. Add mushroom mixture, toasted bread, and parsley. Mix gently but thoroughly.
6. Bake: Transfer to buttered 9x13 baking dish. Bake 60 minutes until top is golden brown and center is set.
7. Rest and serve: Let cool 10 minutes before serving.
