Recipe
Ingredients:
- 1 lb mixed mushrooms (Shiitake, Hen of The Woods, Chestnut or Chanterelles), sliced or 2 oz. dried mushrooms
- 2 shallots, finely chopped
- 3 cloves garlic, minced
- 4 cups vegetable or chicken stock
- 1 cup heavy cream
- 2 tbsp butter
- 2 tbsp olive oil
- 1/4 cup dry sherry (optional)
- 2 tbsp fresh thyme
- Salt and white pepper to taste
- Fresh chives for garnish
Instructions:
- Sauté the aromatics: Heat butter and olive oil in a large pot. Add shallots and garlic, cook until fragrant (2-3 minutes).
- Cook the mushrooms: Add sliced mushrooms and thyme. Cook until mushrooms release their moisture and become golden (8-10 minutes). If using dried, rehydrate by soaking in water for 30 minutes
- Deglaze: Add sherry if using, and cook for 1 minute to burn off alcohol.
- Add stock: Pour in the stock and bring to a boil. Reduce heat and simmer for 20 minutes.
- Blend: Using an immersion blender, partially blend the soup, leaving some texture.
- Finish with cream: Stir in heavy cream and season with salt and white pepper.
- Serve: Ladle into bowls and garnish with fresh chives.
