Creamy Hungarian Mushroom Soup Recipe
Creamy Hungarian Mushroom Soup

This classic Hungarian mushroom soup is a rich, velvety comfort dish that showcases the deep, earthy flavors of premium mushrooms. With aromatic paprika, fresh dill, and a luxurious creamy base, this soup is perfect for cozy evenings.
Ingredients
- 4 tablespoons unsalted butter
- 2 cups chopped onions
- 1 pound fresh mushrooms, minced or 2 oz. dried mushrooms
- 2 cups chicken broth
- 1 tablespoon soy sauce
- 1 tablespoon paprika
- 2 teaspoons dried dill weed
- 1 cup milk
- 3 tablespoons all-purpose flour
- ½ cup sour cream
- ¼ cup chopped fresh parsley
- 2 teaspoons lemon juice
- 1 teaspoon salt
- Ground black pepper to taste
Instructions
- Sauté the onions: In a large pot, melt butter over medium heat. Add chopped onions and sauté until soft and translucent, about 5-7 minutes.
- Cook the mushrooms: Add minced (or sliced or diced depending upon your preference) mushrooms to the pot and cook until they release their moisture and become tender, about 8-10 minutes. If using dried mushrooms, soak in room temperature water for 30 minutes, drain and add to the pot.
- Add seasonings: Stir in paprika and dried dill weed, cooking for 1 minute until fragrant.
- Create the roux: Sprinkle flour over the mushroom mixture and stir constantly for 1-2 minutes to cook out the raw flour taste.
- Add liquids: Slowly pour in the chicken broth and soy sauce while stirring to prevent lumps. Bring to a gentle simmer.
- Simmer: Reduce heat to low and let the soup simmer for 15 minutes, allowing the flavors to meld and the soup to thicken slightly.
- Add milk: Whisk in the milk and heat through, but do not boil.
- Finish the soup: Remove from heat and stir in sour cream, chopped parsley, and lemon juice. Season with salt and ground black pepper to taste.
- Serve: Ladle into bowls and serve hot with crusty bread or crackers. Top with microgreens and/or shredded cheese for added depth of flavor and nutrition.
Chef's Tips
- Mushroom selection: Use our premium gourmet mushrooms like shiitake or oyster for added depth and complexity.
- Soy sauce secret: The soy sauce adds umami depth that enhances the mushroom flavor without making the soup taste Asian-inspired.
- Temperature matters: Add the sour cream off the heat to prevent curdling and maintain a smooth, creamy texture.
- Make it ahead: This soup tastes even better the next day. Store in the refrigerator for up to 3 days and reheat gently.
- Garnish ideas: Top with extra fresh dill, a swirl of sour cream, or microgreens and shredded cheese for an elegant presentation.
Nutritional Benefits
Mushrooms are packed with B vitamins, selenium, and antioxidants. This warming soup not only comforts the soul but also supports immune health and provides essential nutrients. The addition of lemon juice helps your body absorb the iron from the mushrooms.
