Ramp & Potato Hash with King Trumpet & Sunny Side Up Egg

Simple. Honest. Cast iron comfort food.

Introduction

Some of the best food doesn't come from a cookbook. It comes from a cast iron skillet, a handful of great ingredients, and the instinct to keep it simple.

This is a Ramp hash β€” potatoes fried in bacon grease, wild Ramps folded in until just wilted, finished with crumbled bacon and a sunny side up egg on top. King Trumpet mushrooms sautΓ©ed separately, fanned around the plate. Salt and pepper. Done.

No technique required. Just good ingredients at peak season doing exactly what they're supposed to do.

Ingredients

For the hash:

  • 3–4 medium potatoes, sliced thin (Yukon Gold recommended)
  • 1 bunch fresh Ramps, cleaned β€” bulbs sliced, leaves roughly chopped
  • 3–4 strips bacon, cooked and crumbled (reserve the grease)
  • 2–3 tbsp bacon grease (for frying)
  • Salt and black pepper to taste

For the mushrooms:

  • 2–3 King Trumpet mushrooms, sliced lengthwise into planks
  • 1 tbsp butter or neutral oil
  • Salt and pepper

To finish:

  • 2 eggs, sunny side up
  • Flaky salt and cracked black pepper

Instructions

1. Cook the bacon

Fry bacon in your cast iron until crispy. Remove, crumble, and set aside. Leave the grease in the pan.

2. Fry the potatoes

Over medium heat, add potato slices to the bacon grease in a single layer. Season with salt and pepper. Let them sit undisturbed for 4–5 minutes until golden on the bottom, then flip. Cook another 4–5 minutes. Don't rush this β€” the crust is the point.

3. Add the Ramps

Add the sliced Ramp bulbs first, stir gently, and cook 2 minutes. Add the chopped Ramp leaves and crumbled bacon. Fold everything together and cook another 1–2 minutes until the leaves are just wilted. Remove from heat.

4. SautΓ© the King Trumpet

In a separate pan over medium-high heat, melt butter. Add King Trumpet planks in a single layer. Sear 3–4 minutes per side until deep golden and caramelized. Season with salt and pepper.

5. Fry the eggs

In a small pan, fry eggs sunny side up to your liking. Season with salt and pepper.

6. Plate and serve

Pile the hash in the center of the plate. Fan King Trumpet slices around the edges. Top with the sunny side up egg. Finish with flaky salt and cracked black pepper. Serve immediately.

Notes

  • No Ramps? No worries. Green onions (scallions) are the closest substitute β€” use the whole thing, whites and greens. Leeks or spring onions also work beautifully.
  • Any mushroom works here. Hen of the Woods, Shiitake, Oyster, or even Lion's Mane mushroom will all do the job. Use what you have.
  • Using dried mushrooms: Rehydrate in warm water for 20–30 minutes until pliable. Pat thoroughly dry before sautΓ©ing β€” moisture is the enemy of a good sear. Save the soaking liquid for soups or sauces.
  • Healthier cooking option: Swap bacon grease for avocado oil or extra virgin olive oil (lower heat). Skip the bacon or use turkey bacon. The hash will be lighter but still delicious β€” the Ramps carry plenty of flavor on their own.
  • Cast iron matters: If you have it, use it. The heat retention gives the potatoes that crust you can't replicate in a non-stick pan.
  • Make it vegetarian: Skip the bacon entirely, use butter or olive oil, and add a pinch of smoked paprika for depth.
