  • 1 tbsp fresh ginger, minced

  • 1 tbsp sesame oil
  • 2 tbsp sesame seeds for garnish
  • Fresh cilantro for garnish

For the Sauce:

  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp rice wine or dry sherry
  • 1 tsp cornstarch
  • 1 tsp brown sugar
  • 1/2 tsp red pepper flakes
  • 2 tbsp water

Instructions:

  1. Prep mushrooms: If using dried mushrooms, soak in water for 30 minutes, then drain and slice. For fresh mushrooms, clean and slice into bite-sized pieces.
  2. Make sauce: In a small bowl, whisk together soy sauce, oyster sauce, rice wine, cornstarch, brown sugar, red pepper flakes, and water until smooth. Set aside.
  3. Heat wok: Heat vegetable oil in a large wok or skillet over high heat until smoking.
  4. Stir-fry mushrooms: Add mushrooms and stir-fry 3-4 minutes until golden and tender. Remove and set aside.
